The Depot — Barnes
A well know landmark in south west London for 25 years, I have been involved with this client a number of times. The restaurant has a wonderful aspect overlooking the river Thames in Mortlake and is immensely popular.
The brief initially involved making fundamental changes in the kitchen from a very formulated menu with skills to match to, a ‘neighbourhood’ menu that reflected the then current change into modern British cooking. It was a difficult task as the aim was to utilise the current brigade and educate and instill new cooking methods and ideas. There was little budget for new kit but within a month the kitchen had turned around and was producing much better and well received food.
The client also needed an analysis of kitchen practice and assessments of senior personnel which required good man management skills.
